No one works harder than we do to make sure that every oyster we harvest is farmed in accordance with our strict environmental and quality guidelines. Oysters are available for sale all year round. They begin life in a hatchery, and when about the size of a thumbnail, they are transferred to the oyster beds in Loch Harport. They lie in fine mesh bags lying on intertidal trestles, using only the natural resources of the crystal clear Loch Harport waters for their food; they can take up to four years to reach maturity. |
